Once upon a time… in a land pre-pandemic, there was a nonprofit food distribution organization that offered culinary classes and community cooking courses…
While that seems like a far-fetched fairytale, we really do miss offering those services to our community. Second Harvest’s nutrition educators empower families to choose foods that help them live healthy, active lives. We are taking our mission to fight hunger to the next level by investing in long-term health through nutrition education and hands-on cooking classes. We are working towards offering those again but in the meantime, we want to remind you that the Second Harvest Kitchen website is a free resource you can access at any time for fun and exciting new recipes. Our nutrition education staff dedicate a lot of time to creating recipes that are both nutritious and delicious. Check out some of our summertime favorites below!
1. Garlic Hummus
If you don’t like hummus or chickpeas, we urge you to try this recipe! The garlic adds a ton of flavor and the recipe quickly comes together in any blender or food processor you have! We love dipping celery sticks, carrots, and pita chips in ours!
2. Fresh Berry Crisp
Berries are popping up all over Washington. You can easily make a family day trip by visiting your favorite local farm to pick berries or pick them up at the grocery store. Our fresh berry crisp is the perfect way to showcase Washington’s natural candies!
3. Roasted BBQ Chicken with Roasted Veggies
We can’t think of a summer classic more iconic than barbecue chicken!
4. Mandarin Orange and Chicken Salad
Nothing says “summer” quite like adding fruit to your salad. This is a great recipe to add fiber and protein to your veggies. It may sound like an odd combination, but the naturally sweet flavors make for a great addition to a refreshing salad!
5. Strawberry Mango Guacamole
Guacamole is always great on a hot day… No further explanation needed.
